This dish is perfect for the entire family, for even young children who don’t like eggs, or vegetables, rarely balk at them when they are mixed with so much delicious melted cheese! Plus, they can’t see the whole eggs, nor the whole spinach leaves. If you are in a huge hurry, the frozen spinach that the recipe calls for is a great option, but if you want a more garden fresh option, just use 10 ounces of fresh spinach from your favorite farmer’s market.
